The PATCH: First of the season, and picked very young, so young that the pod is still flat and the peas have just developed. Crisp and sweet, they can be served raw, or lightly steamed, boiled or stir-fried. Patches are pesticide and herbicide-free. Picked fresh on collection day and packed into compostable bags. Wash before use.
